Chicken Meatloaf & Saucy Topping

Meatloaf Ingredients

  • 3/4 Cup Cooked Ham (diced)
  • 1/4 Cup Italian Breadcrumbs
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Panko Crumbs
  • 3/4 Cup Swiss Cheese (chopped)
  • 2 lb Ground Chicken (lean)
  • 1 Large Egg
  • 2 TSP Garlic Powder
  • 2 TSP Dry Onion
  • 1 TSP Dry Parsley
  • 1/2 TSP Ground Black Pepper
  • 1 TSP Salt

Meatloaf Instructions

Preheat the oven to 350°F.

Grease or line a baking dish with parchment paper, set aside.

Mix bread crumbs, cheese, chicken, egg, garlic, ham, mayonnaise, onion, parsley, pepper and salt together.

Mold and shape rectangularly on a baking dish. Bake for 25 minutes. Remove and sprinkle top with panko.  Bake again for 15 minutes. Now, prepare gravy topping. Remove meatloaf, rest and serve hot with gravy topping.

Saucy Topping Ingredients

  • 1/4 Cup Heavy Cream
  • 1 Cup Milk
  • 1/2 Cup Parmesan Cheese (grated)
  • 3 TBSP All Purpose Flour
  • 3 TBSP Butter (salted)
  • 1 TBSP Dijon Mustard
  • 1/2 TSP Nutmeg (ground)
  • 1/8 TSP Ground Black Pepper (to taste)
  • 1/8 TSP Salt (to taste)
  • 1 TSP Worchestire Sauce

Saucy Topping Instructions

Melt butter in a saucepan over medium heat. Slowly incorporate flour and continuously whisk for a roux consistency (roughly 2 minutes). Slowly incorporate cream, milk and continuously stir. Add dijon and worchestire. Simmer and continuously stir until desired thickness.

Remove from heat. Add cheese, nutmeg, pepper and salt. Top meatloaf, serve hot.

Tips

  • Compliments side dishes of asparagus, fingerling potatoes, glazed carrots, au gratin potatoes or roasted/steamed vegetables. Personally, we like au gratin potatoes.
  • Cut meatloaf in slices and then top with gravy sauce. Makes reheating easier.
  • Does not reheat well with sauce topping.
  • Leftovers last 2 – 3 months in the freezer.
  • Leftovers last 3 – 4 days refrigerated.
  • Meatloaf internal should reach 165°F.
  • Panko should be golden brown.
  • Swiss cheese substitutes are Emmental, Jarlsberg or Maasdam cheese.
  • You may substitute ham with 6 slices of Virginia Ham.
  • Wear cooking gloves as the mixing is extremely sticky (and gross).
