The first time I ever tried Chicken A La King was during our courtship. As a bachelor Jacques always had a few packs of Stouffers in the freezer. It’s a great comfort and hearty meal.
Ingredients:
- 1 Chicken Bouillon Cube
- 1 Chicken Broth
- 1/2 Cup Green Bell Pepper (finely chopped)
- 1/3 Cup Flour
- 3 Cups Half & Half
- 1/2 Cup Red Bell Pepper (finely chopped)
- 1/2 Cup White Wine
- 4 Garlic Cloves (minced)
- 4 Large Boneless Skinless Chicken Breast (cut cubed pieces)
- 8 oz Button Mushrooms
- 15 oz Can Le Sueur Sweet Very Young Peas
- 1 Small Yellow Onion (finely diced)
- Pepper (to taste)
- Salt (to taste)
- 5 TBSP Butter
- 1 TBSP Olive Oil
- 1 TSP Basil (dried)
- 1/4 TSP Ground Sage
- 1/2 TSP Mustard Powder
- 1 /2 TSP Onion Powder
- 1/8 TSP Paprika
- 1/2 TSP Parsley (dried)
- 1/2 TSP Sriracha Hot Sauce
- 1/2 TSP Thyme (dried)
- 1 TSP Worcestershire Sauce
Instructions:
Works best to prep (wash chicken, mushrooms) and measure everything before beginning.
Combine and set aside the chicken broth, half and half, hot sauce and Worcestershire sauce. Combine and set aside the spices (Ground Sage, Mustard Powder, Onion Powder, Pepper, Paprika, Parsley and Thyme.
Destem and slice mushrooms. Place in a bowl. Add finely chopped bell peppers, onion and minced garlic. Set aside.
Cook chicken over medium heat with olive oil for 5 minutes. Remove from heat and saucepan. Set aside.
Saute garlic, mushrooms, onions for 1 minute then pour wine while continuously scraping the saucepan bottom. Cook for 5 minutes over medium heat. Continuously stirring, add butter and flour. Cook for 1 – 2 minutes.
Add chicken bouillon cube and milk mixture. Bring to a soft boil then reduce heat to simmer for 10 minutes. Add peas and simmer for another 10 minutes. Cook egg noodles according to packaging. Serve hot, top egg noodles with a la king sauce.
Tips:
- Compliments buttermilk biscuits, pastry shells, saffron yellow rice and white rice. We prefer egg noodles or saffron yellow rice.
- Leftovers last 2 – 3 months in the freezer.
- Leftovers last 2 – 3 days refrigerated.
- You may add 4 oz Pimentos (diced).
- You may add sliced celery.
- You may substitute the Chicken for Tuna or Turkey.
- You may substitute White Wine with Chicken Broth or 1/4 Cup Sherry.
- White wines that work well are Cabernet Blanc, Chardonnay, Cooking or Pinot Grigio.
