Ops, I forgot to take a photo before serving it.

Ingredients:

  • 2 Cans (12.5 oz EA) White Chunk Chicken Breast (shred apart)
  • 1/4 Cup Celery (chopped)
  • 3/4 Cup Craisins (chopped) 
  • 3/4 Cup Mayonnaise
  • 1/4 Cup Pecans (chopped)
  • 1/4 Cup Red Onion (chopped)
  • Pepper (to taste)
  • Salt (to taste)
  • 1 TBSP Dijon Mustard
  • 2 TBSP Sour Cream

Instructions:

Drain water from the can, place in a bowl and shred. Chop ingredients as required and place in the mixing bowl. Add all other ingredients and mix well. Chill and serve cold.

Tips:

  • Add Pecans just before serving to maintain crunch.
  • Great served on butter crackers, lettuce salad, or sandwich.
  • Leftovers last 2 – 3 days refrigerated.
  • Optional additions: Apples. Avocado, Fresh Parsley, and/or Purple Grapes.
  • Prefer less creaminess, omit the Sour Cream.
  • Use rotisserie chicken or leftover turkey breast.
  • You may substitute the Chicken for Turkey.
  • You may substitute the Pecans for Walnuts.
  • You may substitute Sour Cream for Greek Yogurt.
