Canoas de Platanos Maduros (Sweet Plantain Canoes Recipe)

I considered this a variation to the traditional Sweet Plantain Canoes as I prepare it more like a lasagna dish.

Ingredients:

Preheat the oven to 350F. Microwave frozen maduros for 5 minutes. Once done, cut chunks in half, place eventually in a baking dish and bake for 25 – 30 minutes until golden but not too caramelized. Meanwhile, cook your hamburger meat and drain once fully cooked. Return to heat, add your adobo, sazon, recaito and sofrito. Stir well. It should be eventually coated with spices; if not, you may add more. When ready, remove the dish from the oven, sprinkle generous amounts of grated cheese on top, add hamburger meat mixture, and then top with more grated cheese. Return to the oven for 15 – 20 minutes until the cheese has melted. Serve hot.

Tips

  • Leftovers reheat well.
  • The hamburger mixture (with spices) makes for a yummy sloppy joe style sandwich.
  • Traditional Puerto Rican meal or side dish to rice and beans.
  • You may opt for the traditional long frozen plantains and just individually stuff them instead.
  • You may opt for fresh plantains.
