Ingredients:
- Goat Cheese (crumbled)
- Honey (drizzle to taste)
- 1 Large Honeycrisp Apple (cored, sliced)
- Lightly Salted Pistachios (chopped)
- Olive Oil (drizzle)
- Pepper (to taste)
- Prosciutto Slices
- Salt (to taste)
- Thyme (fresh)
Instructions:
Strip thyme branches of leaves and gently mix with crumbled goat cheese, set aside.
Preheat the grill.
Core apple and slice to preferred thickness and place in a mixing bowl. Drizzle with olive oil. Sprinkle with pepper and salt. Mix well. Wrapped each piece of apple with prosciutto. Once wrapped any excess olive oil remaining in the bowl use to brush both side of the prosciutto wrapped apple.
Grill on medium heat for 3 minutes on each side. Once grill marks appear, place on a serving plate. Top with crumbled goat cheese mixture and pistachios. Lightly drizzle with honey. Serve warm.
Tips
- Honeycrisp Apple Season is late September – October.
- Honeycrisp apples are reminiscent of apple cider.
- Honeycrisp apples last longer, refrigerated in a crisp drawer wrapped with a damp paper towel.
